300g (10.5 oz) penne pasta

200g (7 oz) fresh spinach

200g (7 oz) button mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

300ml (10 fl oz) heavy cream

200ml (7 fl oz) vegetable or chicken broth

100g (3.5 oz) cream cheese, softened

100g (3.5 oz) grated parmesan cheese

150g (5.5 oz) mozzarella cheese, shredded

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté for 2-3 minutes until it becomes translucent. Then add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are tender.

        Add Spinach: Gradually add the fresh spinach to the skillet, stirring until it wilts down completely. Season with salt, pepper, oregano, and thyme.

          Make the Cream Sauce: Lower the heat and pour in the vegetable or chicken broth, stirring well. Add the heavy cream and soften the cream cheese by mixing it in until fully integrated. Bring the mixture to a gentle simmer.

            Combine Pasta and Sauce: In a large mixing bowl, combine the cooked penne pasta with the creamy spinach and mushroom sauce. Stir in half of the grated parmesan cheese and mix until everything is evenly coated.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (or similar size) baking dish. Spread it out evenly.
