Creamy Spinach and Turkey Lasagna Rolls

Ingredients
  

9 lasagna noodles

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Lasagna Noodles:

    Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and set aside.

      Cook the Turkey:

        In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the ground turkey, season with salt, pepper, and Italian seasoning. Cook until the turkey is browned and fully cooked, about 7-10 minutes.

          Add Spinach:

            Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let the mixture cool slightly.

              Prepare the Cheese Mixture:

                In a large bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, grated Parmesan cheese, egg, and the turkey-spinach mixture. Mix well until all ingredients are integrated.

                  Assemble the Rolls:

                    Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take a cooked lasagna noodle, spread about 2-3 tablespoons of the cheese and turkey filling along its length. Roll the noodle tightly and place seam-side down into the baking dish. Repeat this step with all noodles.

                      Top with Sauce and Cheese:

                        Pour the remaining marinara sauce evenly over the top of the lasagna rolls. Sprinkle with the remaining 1/2 cup of mozzarella cheese.

                          Bake:

                            Preheat your oven to 375°F (190°C). Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

                              Serve:

                                Allow the lasagna rolls to cool for about 5 minutes. Garnish with fresh basil leaves if desired, then serve warm and enjoy!
