Creamy Spinach Feta Orzo with Chicken

1 cup orzo pasta

2 tablespoons olive oil

1 pound chicken breast, diced into bite-sized pieces

2 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried oregano

Salt and pepper to taste

Fresh lemon zest for garnish

Fresh parsley, chopped for garnish

Instructions
 

Cook the Orzo: In a pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and dried oregano. Sauté until the chicken is golden and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Spinach: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the chopped spinach and sauté until wilted, about 2-3 minutes.

        Combine Ingredients: Return the cooked chicken to the skillet, stirring to combine with the spinach. Add the cherry tomatoes, cooked orzo, chicken broth, and heavy cream. Stir everything together until evenly combined.

          Add Feta Cheese: Reduce heat to low and mix in the crumbled feta cheese. Allow the mixture to simmer gently for 3-5 minutes, stirring occasionally until the sauce has thickened slightly.
