Creamy Sun-Dried Tomato Chicken Pasta

8 oz (225g) pasta of your choice (fettuccine, penne, or rotini work well)

2 chicken breasts, boneless and skinless

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes (packed in oil), drained and chopped

1 cup heavy cream

1 cup low-sodium chicken broth

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Prep the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and pepper.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Once done, remove the chicken from the skillet, cover, and set aside to rest.

        Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes, and cook for 2-3 minutes.

          Add Liquids: Pour in the chicken broth and bring to a simmer. Allow it to reduce slightly for about 2-3 minutes. Lower the heat and then stir in the heavy cream, Italian seasoning, and crushed red pepper flakes (if using). Let it simmer for another 3-4 minutes until the sauce thickens.

            Combine Ingredients: Once the sauce has thickened, slice the chicken into strips and add it, along with the cooked pasta, to the skillet. Toss everything together until well coated. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

              Finish with Cheese: Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning with salt and pepper as needed.

                Serve: Plate the creamy sun-dried tomato chicken pasta and garnish with fresh basil leaves. Serve immediately for a delicious meal!
