Creamy Sweet Potato Soup

1 carrot, diced

1 teaspoon fresh ginger, grated

4 cups vegetable broth

1 cup coconut milk (full-fat for a creamier texture)

2 tablespoons olive oil

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Optional: Red pepper flakes for heat

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the garlic, ginger, and carrot, cooking for an additional 2-3 minutes until fragrant.

    Cook Sweet Potatoes: Add the diced sweet potatoes to the pot, then sprinkle in the ground cumin and smoked paprika. Mix well to coat the sweet potatoes with the spices. Cook for another 2 minutes.
