8 oz (225g) pasta (fettuccine or penne)

2 tbsp olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, drain excess liquid

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus more for serving

1/2 tsp red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1/2 cup fresh basil leaves, chopped (plus extra for garnish)

Freshly cracked black pepper, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant—be careful not to burn it.

      Add Tomatoes: Stir in the diced tomatoes (drain excess liquid if needed) and let them cook for 2-3 minutes, allowing the flavors to meld.

        Create the Cream Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir to combine, then add the grated Parmesan cheese, red pepper flakes (if using), and season with salt and freshly ground black pepper to taste. Keep stirring until the cheese melts and the sauce is creamy.

          Combine Pasta and Sauce: Add the cooked pasta to the sauce in the skillet, tossing well to combine. If the sauce is too thick, gradually add small amounts of reserved pasta water until you reach your desired consistency.
