Ingredients

1 ½ cups Arborio rice

4 cups vegetable broth (low-sodium preferred)

1 can (15 oz) crushed tomatoes

1 medium yellow onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh basil leaves, chopped

1 tsp dried oregano

1 tsp salt (or to taste)

½ tsp black pepper (or to taste)

2 tbsp olive oil

Optional: Extra basil leaves for garnish

Instructions

Prepare the Base: In a large crockpot, drizzle the olive oil. Add the chopped onion and minced garlic. Stir gently to coat the onions.

Add the Rice: Pour in the Arborio rice, and stir to combine with the onion and garlic mixture. Sautéing for a few minutes will add flavor to the rice, but this step is optional since it's only simmered later.

Incorporate Tomatoes and Broth: Add the crushed tomatoes, vegetable broth, dried oregano, salt, and black pepper to the crockpot. Stir everything together until well mixed.

Slow Cook: Cover the crockpot and set it on low heat. Let the risotto cook for about 2.5 to 3 hours, stirring occasionally. The rice should absorb the liquid and become creamy.

Finish with Cream and Cheese: Once the risotto is creamy and the rice is al dente, stir in the heavy cream and grated Parmesan cheese. Mix until the cheese is melted and the risotto reaches your desired creaminess.

Add Fresh Basil: Finally, fold in the chopped fresh basil. Adjust the seasoning with additional salt and pepper if needed.

Serve: Scoop the creamy tomato basil risotto into bowls. Garnish with extra fresh basil leaves and additional grated Parmesan if desired. Enjoy your comforting and flavorful dish!
