4 medium zucchinis, sliced into thin rounds

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1 large egg

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Zucchini: Preheat the oven to 375°F (190°C). In a large bowl, toss the sliced zucchinis with olive oil, salt, pepper, garlic powder, and Italian seasoning until evenly coated.

    Bake Zucchini: Spread the zucchini in a single layer on a baking sheet and roast for about 20 minutes, or until just tender. Remove from the oven and set aside to cool slightly.

      Make the Alfredo Sauce: In a medium saucepan over medium heat, combine the heavy cream and half of the Parmesan cheese. Stir continuously until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.

        Prepare Cheese Mixture: In a large mixing bowl, combine the ricotta cheese, egg, remaining Parmesan cheese, and half of the mozzarella cheese. Mix until well-combined.

          Assemble the Bake: In a greased 9x13 inch baking dish, layer half of the roasted zucchini. Spread half of the ricotta mixture over the zucchini, followed by half of the creamy Alfredo sauce. Repeat the layers with the remaining zucchini, ricotta mixture, and Alfredo sauce.

            Top with Mozzarella: Sprinkle the remaining mozzarella cheese evenly over the top of the bake.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.

                Serve: Remove from the oven and let cool for about 5 minutes. Garnish with fresh parsley before serving.
