Crispy Baked Chicken Nuggets

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup breadcrumbs (panko for extra crunch)

½ cup grated Parmesan cheese

Cooking spray or olive oil, for drizzling

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

    Prepare the chicken: In a medium bowl, season the bite-sized chicken pieces with salt and pepper. Set aside.

      Set up the dredging stations: In three separate shallow dishes, prepare your breading stations:

        - In the first dish, place the flour.

          - In the second dish, whisk together the eggs and Dijon mustard until well combined.

            - In the third dish, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, additional salt, and pepper.

              Coat the chicken nuggets: Take each piece of chicken and coat it in the flour, shaking off any excess. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb mixture, ensuring it’s fully covered. Repeat the process for all chicken pieces.

                Arrange on baking sheet: Place the coated chicken nuggets on the prepared baking sheet in a single layer, making sure they aren’t touching.

                  Bake to perfection: Lightly spray the top of the nuggets with cooking spray or drizzle with olive oil to help them crisp up in the oven. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F/75°C).
