1 cup balsamic vinegar

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1/2 cup extra virgin olive oil

Salt and black pepper to taste

1 tablespoon finely chopped fresh herbs (basil, thyme, or parsley)

Optional: 1/4 cup crispy fried shallots or onions for garnish

Reduce the Balsamic Vinegar: In a small saucepan, bring the balsamic vinegar to a simmer over medium heat. Allow it to gently simmer for about 10-15 minutes, stirring occasionally, until it has reduced by half and has thickened slightly. Remove it from the heat and let it cool.
