1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (optional)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 small red onion, diced

1 bell pepper (any color), diced

1 avocado, diced

4 cups mixed salad greens (e.g., spinach, arugula, romaine)

¼ cup BBQ sauce (store-bought or homemade)

¼ cup fresh cilantro or parsley, chopped (for garnish)

Juice of 1 lime

Crispy Chickpeas: Preheat your oven to 400°F (200°C). Spread the rinsed chickpeas on a clean kitchen towel and pat them dry. This helps them get crispy. In a mixing bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Spread the seasoned chickpeas on a lined baking sheet in a single layer.

    Bake: Roast the chickpeas in the preheated oven for 20-25 minutes, stirring halfway through, until they are golden and crispy.

      Prepare the Salad: While the chickpeas are baking, in a large bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, and avocado.

        Dress the Salad: Once the chickpeas are done, let them cool for a few minutes, then add them to the vegetable mixture. Drizzle your BBQ sauce over the salad and squeeze the lime juice on top. Toss gently until everything is well combined.
