Crispy Blueberry Parfaits

For the Crispy Layer:

1 cup rolled oats

1/4 cup flaked coconut

1/4 cup chopped nuts (almonds or walnuts)

1/4 cup honey or maple syrup

2 tbsp coconut oil, melted

1/2 tsp cinnamon

A pinch of salt

For the Blueberry Layer:

2 cups fresh blueberries

2 tbsp sugar (adjust to taste)

1 tbsp lemon juice

1 tsp vanilla extract

For the Yogurt Layer:

2 cups Greek yogurt (plain or vanilla)

1 tsp honey (optional, for sweetness)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Crispy Layer:

    - Preheat your oven to 350°F (175°C).

      - In a large bowl, combine the rolled oats, flaked coconut, chopped nuts, honey (or maple syrup), melted coconut oil, cinnamon, and a pinch of salt. Mix well until everything is evenly coated.

        - Spread the mixture evenly on a baking sheet lined with parchment paper.

          - Bake for 15-20 minutes, stirring halfway through, until golden brown and crisp. Remove from oven and allow to cool.

            Prepare the Blueberry Layer:

              - In a medium saucepan over medium heat, toss the fresh blueberries with sugar, lemon juice, and vanilla extract.

                - Cook for about 5-7 minutes, until the blueberries start to burst and release their juices. Remove from heat and set aside to cool slightly.

                  Assemble the Parfaits:

                    - In clear serving glasses or bowls, start with a layer of Greek yogurt, followed by a layer of the cooked blueberry mixture, and then a generous layer of the crispy oat mixture.

                      - Repeat the layering process until the glasses are filled, finishing with a layer of crispy oat mixture on top.

                        Serve:
