4 boneless, skinless chicken thighs

1 cup buttermilk

2 tablespoons Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 cup all-purpose flour

1 cup cornmeal

1 teaspoon salt

½ teaspoon black pepper

Vegetable oil, for frying

4 brioche buns

4 tablespoons mayonnaise

4 slices of cheddar cheese

1 cup shredded lettuce

1 medium tomato, sliced

4 pickles (optional)

      Prepare the Dredging Station:

        - In a shallow dish, mix the flour, cornmeal, salt, and black pepper. Set aside.

          Heat the Oil:

            - In a deep skillet or Dutch oven, add enough vegetable oil to reach a depth of about 2 inches. Heat the oil to 350°F (175°C) over medium heat.

              Dredge the Chicken:

                - Remove the marinated chicken from the refrigerator. Allow any excess buttermilk to drip off, then coat each piece of chicken in the flour and cornmeal mixture, pressing firmly to ensure a good coating.

                  Fry the Chicken:
