1/4 cup Greek yogurt

2 tablespoons mayonnaise

Juice of 1 lemon

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

Salt and pepper to taste

6 cups romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup shaved Parmesan cheese

1/2 cup croutons (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Crispy Chickpeas:

    - Preheat your oven to 425°F (220°C).

      - In a medium bowl, toss the drained chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper until well-coated.

        - Spread the chickpeas on a baking sheet in a single layer.

          - Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, shaking the pan halfway through for even cooking. Remove and set aside to cool.

            Make the Caesar Dressing:

              - In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, and minced garlic until smooth.
