Ingredients

2 large yellow onions

1 cup all-purpose flour

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (panko preferred for extra crunch)

Oil for frying (vegetable or canola)

Instructions

Prepare the Onions:

    - Peel the onions and slice them into 1/4-inch thick rings. Carefully separate the rings and set aside.

      Make the Breading Stations:

        - In one bowl, combine the flour, garlic powder, paprika, cayenne pepper, salt, and black pepper. Mix well.

          - In a second bowl, pour the buttermilk.

            - In a third bowl, add the breadcrumbs.

              Bread the Onion Rings:

                - Dip each onion ring first into the flour mixture, ensuring it’s fully coated. Shake off any excess flour.

                  - Next, dip it into the buttermilk, allowing it to soak for a moment.

                    - Finally, coat the ring in the breadcrumbs, pressing lightly to adhere. Repeat this process until all onion rings are breaded.

                      Heat the Oil:

                        - In a deep skillet or frying pot, heat enough oil to submerge the rings over medium heat (about 2 inches deep). Check the temperature with a thermometer; it should reach around 350°F (175°C).

                          Fry the Onion Rings:

                            - Carefully place a few breaded onion rings in the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes on each side.

                              - Use a slotted spoon to remove the cooked onion rings and place them on a plate lined with paper towels to absorb excess oil.

                                Serve and Enjoy:

                                  - Serve the crispy fried onion rings warm with your choice of dipping sauce (ranch, ketchup, or a spicy aioli works great!).
