Ingredients
  

2 ripe but firm mangoes, peeled and diced

2 cups mixed greens (arugula, spinach, and kale)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1/2 small red onion, thinly sliced

1/2 cup unsalted roasted peanuts, coarsely chopped

1/4 cup fresh cilantro, chopped

1/4 cup fresh mint leaves, chopped

Juice of 2 limes

3 tablespoons extra virgin olive oil

1 tablespoon honey or agave syrup

1 tablespoon soy sauce

Salt and pepper to taste

Optional: 1 avocado, sliced, for extra creaminess

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey, soy sauce, salt, and pepper until well combined. Set aside to allow flavors to meld.

    Assemble the Salad Base: In a large mixing bowl, combine the mixed greens, shredded carrots, red bell pepper, and red onion. Toss them lightly to mix.

      Add Mango and Herbs: Gently fold in the diced mango, fresh cilantro, and mint leaves. Be careful not to mash the mango pieces to maintain some of their integrity.

        Combine Dressing and Salad: Drizzle the prepared dressing over the salad mixture. Using tongs, gently toss everything together until the salad is evenly coated with the dressing.

          Add Crunch: Just before serving, sprinkle the chopped roasted peanuts on top for an added crunch. If desired, also add the sliced avocado for creaminess.
