1 cup polenta (coarse cornmeal)

4 cups vegetable broth

1 teaspoon salt

1/2 teaspoon black pepper

1 cup grated Parmesan cheese

1/4 cup sour cream or Greek yogurt

2 tablespoons unsalted butter

1 tablespoon olive oil

Fresh herbs (like thyme or rosemary) for garnish

Optional: marinara sauce or pesto for serving

Prepare the Polenta: In a medium saucepan, bring the vegetable broth to a boil. Stir in the salt and black pepper, then gradually whisk in the polenta. Reduce heat to low and cook, stirring frequently, for about 15-20 minutes, or until thickened and creamy.
