2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon paprika

Salt and pepper to taste

Olive oil spray or cooking oil for frying

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash the zucchinis and slice them into thin rounds, about 1/4 inch thick. Lay the slices on paper towels and sprinkle them lightly with salt. Let them sit for about 10-15 minutes to draw out moisture, then pat them dry with another paper towel.

      Set Up the Dipping Station: In a shallow bowl, beat the eggs until well combined. In another shallow bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, paprika, salt, and pepper.

        Coat the Zucchini: Dip each zucchini slice into the beaten eggs, allowing any excess to drip off. Then, coat the slices in the breadcrumb mixture, pressing gently to ensure they adhere well. Place the coated zucchini chips on the prepared baking sheet, leaving space between each piece.

          Spray with Oil: Lightly spray the tops of the zucchini chips with olive oil spray. This step is crucial for achieving a crispy texture.

            Bake: Bake the zucchini chips in the preheated oven for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.
