3 tablespoons cornstarch

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for heat)

Fresh herbs (like parsley or chives) for garnish (optional)

Instructions
 

Preheat Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into thick waffle fry shapes using a waffle fry cutter or a knife. Try to keep them uniform in size to ensure even cooking.

      Soak in Water: To achieve maximum crispiness, soak the cut sweet potatoes in cold water for at least 30 minutes. This step removes excess starch.

        Dry Sweet Potatoes: After soaking, thoroughly drain and rinse the sweet potato fries. Pat them dry with a clean towel to remove excess moisture.

          Seasoning Mix: In a large bowl, combine the cornstarch, olive oil, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).

            Toss Sweet Potatoes: Add the dried sweet potato fries to the bowl and toss until they are evenly coated with the seasoning mixture.
