Crockpot Chicken Alfredo Lasagna Rolls

12 lasagna noodles

2 cups cooked chicken, shredded (rotisserie chicken works great!)

2 cups ricotta cheese

1 egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups Alfredo sauce (store-bought or homemade)

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Lasagna Noodles:

    - Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean towel to prevent sticking.

      Make the Filling:

        - In a mixing bowl, combine the shredded chicken, ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined and creamy.

          Assemble the Rolls:

            - Take one lasagna noodle and spread a generous amount of the chicken and ricotta mixture along its length. Roll the noodle tightly from one end to the other, placing the seam side down. Repeat this process with all the noodles.

              Layer the Crockpot:

                - Pour a small amount of Alfredo sauce into the bottom of the crockpot to prevent sticking. Place half of the lasagna rolls in a single layer. Spoon half of the remaining Alfredo sauce over the rolls and sprinkle with half of the mozzarella and Parmesan cheese.

                  Add More Layers:

                    - Add the remaining lasagna rolls, followed by the remaining Alfredo sauce, mozzarella, and Parmesan cheese on top.

                      Cook:

                        - Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours, until the cheese is bubbly and the rolls are heated through.

                          Serve:

                            - Once cooked, let it sit for about 10 minutes to set up. Garnish with chopped fresh parsley before serving for a pop of color.
