Crockpot Cucumber Dill Salmon

4 salmon fillets (about 6 oz each)

1 large cucumber, thinly sliced

1 cup plain Greek yogurt

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon olive oil

Salt and pepper to taste

1/2 teaspoon paprika (optional)

Fresh dill for garnish

Prepare the Sauce: In a medium bowl, mix together the Greek yogurt, fresh dill, minced garlic, lemon juice, olive oil, salt, pepper, and paprika (if using). Stir until well combined and set aside.

    Layer the Cucumber: Place half of the cucumber slices on the bottom of the crockpot. Season with a pinch of salt and pepper.

      Add the Salmon: Carefully place the salmon fillets on top of the cucumbers. Spread the prepared dill sauce evenly over the salmon fillets.

        Finish with Cucumbers: Layer the remaining cucumber slices over the top of the salmon fillets. Sprinkle any remaining dill on top for extra flavor.

          Cook in the Slow Cooker: Cover the crockpot and cook on low for 2 to 3 hours, or until the salmon is cooked through and flakes easily with a fork.

            Serve: Once done, carefully remove the salmon and cucumbers from the crockpot. Serve warm, garnished with additional fresh dill and accompanied by your favorite side dishes.
