1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

1 medium zucchini, diced

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 cup butternut squash, diced

1 can (15 oz) chickpeas, drained and rinsed

1 cup vegetable broth

1 can (14 oz) diced tomatoes, with juices

1/2 cup dried apricots, chopped

1/4 cup almonds, slivered

2 teaspoons ground cumin

1 teaspoon ground cinnamon

1 teaspoon ground coriander

1 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup fresh cilantro or parsley, chopped (for garnish)

Cooked couscous or rice (for serving, optional)

Instructions
 

Prepare the Ingredients: Begin by washing and chopping all your vegetables. Dice the onion and garlic, slice the carrots, and chop the bell peppers and zucchini. Dice the butternut squash and chop the dried apricots.

    Layer the Crockpot: In your crockpot, start by layering the diced onion and garlic at the bottom. This will help create a flavorful base for your tagine.

      Add Vegetables: Next, add in the carrots, zucchini, bell peppers, butternut squash, and chickpeas. Stir gently to combine.
