Ingredients

4 bone-in pork chops (about 1 inch thick)

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup low-sodium chicken broth

1 cup sliced mushrooms (button or cremini)

1 medium onion, sliced

3 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 tablespoons cornstarch (optional, for thickening)

2 tablespoons water (optional, for thickening)

Instructions

Prepare the Pork Chops: Pat the pork chops dry with paper towels. Season both sides with salt, pepper, garlic powder, and onion powder.

Sear the Chops: Heat the olive oil in a skillet over medium-high heat. Once hot, add the seasoned pork chops and sear for about 3-4 minutes on each side, until golden brown. This step adds a depth of flavor, but can be skipped if you're short on time.

Layer Ingredients in the Crockpot: Place the sliced onion and mushrooms at the bottom of the crockpot. Lay the seared pork chops on top.

Add Broth and Seasonings: In a measuring cup, combine the chicken broth, minced garlic, Worcestershire sauce, thyme, and rosemary. Pour the mixture over the pork chops in the crockpot.

Cook on Low: Cover and cook on low for 6-7 hours or high for 3-4 hours. The pork chops should be tender and juicy, infused with all the flavors.

Prepare the Gravy (optional): If you prefer a thicker gravy, mix the cornstarch with water in a small bowl to create a slurry. About 30 minutes before the cooking time is up, stir the slurry into the crockpot and let it cook for the remaining time to thicken.

Serve: Once done, carefully remove the pork chops from the crockpot. Serve them with the mushroom gravy spooned over the top. Enjoy with mashed potatoes or rice for a complete meal!
