Crunchy Air-Fried Avocado Tacos

2 ripe avocados

1 cup breadcrumbs (Panko preferred for extra crunch)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup all-purpose flour

2 large eggs, beaten

8 small corn tortillas

1 cup shredded red cabbage

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro

1 lime, cut into wedges

Prepare the Avocados: Cut the avocados in half and remove the pits. Carefully scoop out the flesh with a spoon and slice each half into thick wedges (about 3-4 slices per half).

    Set up the Dredging Station: In three separate bowls, place the flour in the first bowl, the beaten eggs in the second, and a mix of breadcrumbs, garlic powder, smoked paprika, salt, and pepper in the third bowl.

      Dredge the Avocado Wedges: Dip each avocado wedge first into the flour, ensuring it's fully coated. Shake off excess flour, then dip it into the beaten eggs, allowing the excess to drip off. Finally, coat the avocado wedge in the breadcrumb mixture, pressing gently to ensure it sticks well.

        Air-Fry the Avocados: Preheat the air fryer to 375°F (190°C). Arrange the coated avocado wedges in a single layer in the air fryer basket. Lightly spray the wedges with cooking spray for extra crispiness. Air-fry for about 8-10 minutes, flipping halfway through, until golden and crispy.

          Warm the Tortillas: While the avocado is air-frying, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.

            Assemble the Tacos: Place two or three crispy avocado wedges in the center of each warm tortilla. Top with shredded red cabbage, diced tomatoes, and fresh cilantro.
