Crunchy Buffalo Chicken Wraps

2 large chicken breasts, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ cup buffalo sauce (or to taste)

4 large tortillas (flour or whole wheat)

1 cup lettuce, shredded (Romaine or Iceberg)

1 cup cherry tomatoes, halved

½ cup shredded cheddar cheese

¼ cup ranch or blue cheese dressing (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken breasts with the buttermilk. Cover and refrigerate for at least 30 minutes (or up to 2 hours) to tenderize and flavor the chicken.

    Prepare Breading Station: In one shallow bowl, combine the flour with garlic powder, paprika, salt, and pepper. In a second bowl, place the panko breadcrumbs.

      Bread the Chicken: Remove the chicken from the marinade, letting excess buttermilk drip off. Dredge each chicken breast in the seasoned flour, shaking off the excess. Then, dip it back into the buttermilk briefly before rolling it in the panko breadcrumbs until fully coated.

        Cook the Chicken: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the breaded chicken on the sheet and spray lightly with cooking oil. Bake for 20-25 minutes until golden brown and crispy, flipping halfway through. Alternatively, for a fussier approach, you can pan-fry the chicken in a bit of oil over medium heat until cooked through (about 6-7 minutes on each side).

          Dress the Chicken: Once cooked, remove the chicken from the oven (or pan) and immediately toss it in buffalo sauce until thoroughly coated.

            Assemble the Wraps: Lay out a tortilla on a clean workspace. Spread a tablespoon of ranch or blue cheese dressing in the center (if using), followed by a layer of shredded lettuce, buffalo chicken pieces, halved cherry tomatoes, and a sprinkle of cheddar cheese.
