Crunchy Tofu Lettuce Wraps

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons cornstarch

3 tablespoons vegetable oil

1 red bell pepper, diced

1 cup shredded carrots

3 green onions, chopped

1/4 cup fresh cilantro, chopped

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon sriracha (optional for heat)

Butter lettuce leaves (or iceberg lettuce) for wrapping

Sesame seeds for garnish

Prepare the Tofu: Cut the pressed tofu into small cubes, about 1-inch in size. Place the tofu cubes in a bowl and sprinkle with cornstarch, gently tossing to coat each piece evenly.

    Heat the Oil: In a large non-stick skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the cornstarch-coated tofu cubes in a single layer. Allow them to fry undisturbed for 5-7 minutes until golden brown on one side, then turn to brown the other sides for another 5-7 minutes. Remove the crispy tofu from the skillet and set aside.

      Sauté the Veggies: In the same skillet, reduce the heat to medium and add the diced red bell pepper and shredded carrots. Sauté for about 3-4 minutes until the vegetables are slightly tender but still crisp.

        Combine Ingredients: Add the crispy tofu back into the skillet. Then, stir in the chopped green onions, soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha (if using). Cook together for another 2-3 minutes, stirring gently to combine and heat through.

          Assemble the Wraps: To serve, take a lettuce leaf and spoon generous amounts of the tofu and vegetable mixture into the center. Top with fresh cilantro and sprinkle with sesame seeds.
