2 medium cucumbers, peeled, seeded, and diced

2 medium Hatch green chiles, roasted, peeled, and finely chopped

1 small red onion, finely chopped

2 medium tomatoes, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

Prepare the Ingredients: Begin by peeling and seeding the cucumbers, then dice them into small cubes. Roast the Hatch green chiles over an open flame or under a broiler until charred, then peel and finely chop them.

    Combine in a Bowl: In a large mixing bowl, combine the diced cucumbers, chopped Hatch chiles, diced tomatoes, and finely chopped red onion.

      Add Flavor: Sprinkle in the chopped cilantro, lime juice, garlic powder, and cumin. Season with salt and pepper to taste.
