Easy Balsamic Vinaigrette Pasta Bake

12 oz uncooked penne pasta

1 cup cherry tomatoes, halved

1 zucchini, diced

1 bell pepper (any color), diced

1 cup spinach leaves, chopped

1 cup mozzarella cheese, shredded

½ cup grated Parmesan cheese

½ cup balsamic vinaigrette (store-bought or homemade)

2 cloves garlic, minced

1 tsp dried oregano

1 tsp salt

½ tsp black pepper

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced zucchini, diced bell pepper, and chopped spinach.

        Combine Ingredients: Add the cooked penne pasta to the bowl with the vegetables. Mix in the minced garlic, oregano, salt, black pepper, and balsamic vinaigrette. Toss until everything is well coated.

          Add Cheese: Sprinkle in the mozzarella and half of the grated Parmesan cheese, combining everything thoroughly.

            Transfer to Baking Dish: Pour the pasta and vegetable mixture into a greased 9x13-inch baking dish, spreading it out evenly.

              Top with Cheese: Sprinkle the remaining Parmesan cheese on top of the pasta bake.

                Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Remove from the oven, allow to cool slightly, and garnish with fresh basil leaves, if desired. Serve warm and enjoy your hearty creation!
