Ingredients

2 medium zucchinis, sliced into ½-inch rounds

½ cup grated Parmesan cheese

½ cup breadcrumbs (preferably panko for extra crunch)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

Prepare the zucchini: In a large bowl, combine the zucchini rounds with olive oil, tossing gently until they are well coated.

Mix the coating: In a separate bowl, mix together the grated Parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, salt, and black pepper until thoroughly combined.

Coat the zucchini: Dip each zucchini slice into the breadcrumb mixture, pressing slightly to ensure the coating sticks well. Place the coated zucchini rounds on the prepared baking sheet in a single layer.

Bake: Bake in the preheated oven for about 15-20 minutes, or until the zucchini bites are golden brown and crispy. For an extra crispy texture, you can broil them for an additional 2-3 minutes, keeping a close eye to prevent burning.

Garnish and serve: Once done, remove the zucchini bites from the oven and let them cool slightly. Sprinkle with fresh parsley before serving them warm.
