Easy Lentil Soup with Spinach and Carrots

1 cup dried green or brown lentils, rinsed

4 cups vegetable or chicken broth

2 cups fresh spinach, roughly chopped

2 medium carrots, diced

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper, to taste

1 tablespoon lemon juice (optional)

Fresh parsley, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrots, cooking for about 5 minutes until the onion becomes translucent. Stir in the minced garlic and continue cooking for another minute until fragrant.

    Add the Lentils and Spices: Add the rinsed lentils to the pot, along with the ground cumin, smoked paprika, thyme, salt, and pepper. Stir well to coat the lentils with the spices.

      Combine with Broth: Pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 20-25 minutes, or until the lentils are tender but not mushy.

        Incorporate Spinach: Once the lentils are cooked, stir in the chopped spinach. Allow the soup to simmer for an additional 5 minutes until the spinach is wilted.

          Adjust Seasoning: Taste the soup and adjust salt, pepper, or spices if necessary. For an extra zing, add 1 tablespoon of lemon juice at this stage.
