2 cups cooked rice (preferably day-old)

1 tablespoon vegetable oil

1 clove garlic, minced

1 small onion, diced

1 cup mixed vegetables (carrots, peas, corn, bell peppers)

2 green onions, chopped

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon ginger, grated

Salt and pepper to taste

2 eggs (optional)

Fresh cilantro for garnish (optional)

Prep the Rice: Ensure your rice is cold. If you don't have day-old, spread freshly cooked rice on a tray to cool.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.

      Sauté Aromatics: Add the minced garlic and diced onion to the pan. Sauté for 2 minutes or until the onion becomes translucent.

        Add Vegetables: Toss in the mixed vegetables and grated ginger. Stir-fry for another 3-4 minutes until the veggies are tender but still vibrant.
