To achieve the perfect texture for your Veggie Delight Cashew Fried Rice, it's crucial to prepare your rice properly. Start by cooking your rice a few hours in advance or the day before, as this allows it to cool and firm up, preventing clumping. When freshly cooked rice is still warm, it tends to stick together, which can result in a mushy outcome once stir-fried.

Ingredients

2 cups cooked jasmine or basmati rice (preferably day-old)

1 cup mixed vegetables (carrots, peas, bell peppers, and corn)

1/2 cup cashews, roasted

3 tablespoons soy sauce (low sodium recommended)

2 teaspoons sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch ginger, grated

2 green onions, chopped (separate white and green parts)

1 tablespoon rice vinegar (optional)

Salt and pepper to taste

A pinch of red pepper flakes (optional for heat)

Instructions

Prep the Rice: If using freshly cooked rice, spread it out on a plate and let it cool for about 15 minutes to prevent clumping.

Cook the Aromatics: In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

Sauté the Vegetables: Add the white parts of the chopped green onions and mixed vegetables to the skillet. Stir-fry for 3-4 minutes until they are tender but still crisp.

Add the Rice: Add in the cooked rice, breaking up any clumps with a spatula. Stir well to combine with the vegetables. Allow it to cook for about 3 minutes, occasionally stirring to avoid sticking.

Season It Up: Pour the soy sauce and sesame oil over the rice mixture. Stir in the rice vinegar if using. Season with salt, pepper, and red pepper flakes (if desired). Mix everything thoroughly for another 2-3 minutes.

Add Cashews: Gently fold in the roasted cashews and the green parts of the chopped green onions. Cook for an additional minute until everything is heated through.

Serve and Enjoy: Remove from heat, transfer to a serving dish, and enjoy your tasty, quick cashew vegetable fried rice!
