1 cup red cabbage, finely shredded

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 large bell pepper (any color), diced

1 small zucchini, diced

1 small carrot, grated

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

8 small corn or flour tortillas

For the Avocado Cream:

1 ripe avocado

½ cup Greek yogurt or sour cream

1 tablespoon lime juice

1 clove garlic, minced

Salt to taste

Optional Toppings:

Chopped fresh cilantro

    - In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, minced garlic, and a pinch of salt.
