2 cups cooked jasmine rice (preferably day-old)

1/2 cup fig jam

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup mixed bell peppers, diced (red, yellow, green)

1 cup snap peas, trimmed and chopped

2 eggs, beaten

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon olive oil

2 green onions, sliced for garnish

Salt and pepper to taste

Optional: chopped nuts (like walnuts or pecans) for added crunch

Prepare Your Ingredients: Ensure that all vegetables are chopped and ready to go. If using leftover rice, break up any clumps.

    Heat the Oil: In a large skillet or wok, heat the olive oil and sesame oil over medium heat.

      Sauté Aromatics: Add the chopped onion and minced garlic to the heated oil, sautéing for about 2-3 minutes until the onion becomes translucent and fragrant.

        Add Vegetables: Toss in the diced bell peppers and snap peas, cooking for an additional 4-5 minutes until they are tender but still vibrant.

          Push to the Side: Move the sautéed vegetables to one side of the skillet. Pour the beaten eggs into the cleared space and scramble them, cooking until just set.

            Add Rice and Fig Jam: Add the cooked jasmine rice, soy sauce, and fig jam to the skillet. Stir everything together, ensuring the rice is well-coated with the jam and sauce, cooking for another 2-3 minutes to heat through.
