12 oz spaghetti

1 pint cherry tomatoes

4 cloves garlic, minced

2 tbsp olive oil

1/2 tsp red pepper flakes (optional)

1 tsp sea salt

1/2 tsp black pepper

1/4 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese (plus extra for serving)

Zest of 1 lemon

Juice of 1 lemon

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: In a baking dish, combine the cherry tomatoes, minced garlic, olive oil, red pepper flakes (if using), sea salt, and black pepper. Toss until the tomatoes are well coated. Bake for 20-25 minutes, or until the tomatoes burst and are slightly caramelized.

      Cook the Spaghetti: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the spaghetti.

        Combine Ingredients: In a large skillet over medium heat, add the roasted tomatoes and garlic from the baking dish. If desired, add a splash of the reserved pasta water to loosen the mixture. Add the cooked spaghetti to the skillet along with chopped basil, lemon zest, and lemon juice. Toss everything together until well combined.

          Finalize the Dish: Taste the spaghetti and adjust seasoning with more salt or pepper if necessary. If the pasta seems dry, add more reserved pasta water until you reach your desired consistency.
