Fluffy Apple Cider Donuts

2 cups apple cider

2 1/2 cups all-purpose flour

1 cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp salt

2 large eggs

1/4 cup unsalted butter, melted

1 cup buttermilk

1 tsp vanilla extract

Cinnamon sugar (1/2 cup sugar mixed with 2 tsp cinnamon, for coating)

Instructions
 

Reduce the Cider: In a medium saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat and simmer until it’s reduced to 1 cup, about 20-25 minutes. Remove from heat and allow to cool slightly.

    Prepare the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, melted butter, buttermilk, reduced apple cider, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Be careful not to overmix; a few lumps are okay.

          Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or melted butter.

            Fill the Pan: Transfer the batter to a piping bag or a zip-top bag with a corner snipped off. Fill each donut cavity about 2/3 full with the batter.

              Bake the Donuts: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

                Coat in Cinnamon Sugar: While the donuts are still a bit warm, roll each donut in the cinnamon sugar mixture until fully coated.
