1 cup coconut milk (full-fat for creaminess)

1 cup fresh pineapple chunks (plus extra for garnish)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup shredded unsweetened coconut (for coating)

Instructions
 

In a blender, combine the coconut milk, fresh pineapple chunks, honey (or maple syrup), vanilla extract, and salt. Blend until smooth and creamy, ensuring no pineapple chunks remain.

    Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.

      Carefully pour the mixture into your popsicle molds, leaving a little space at the top for expansion as they freeze.

        Insert popsicle sticks into the molds. If using flexible molds, you can let them freeze a little before adding the sticks to ensure they stand upright.

          Freeze the pops for at least 4–6 hours, or until completely solid.

            Once frozen, remove the popsicles from the molds. To do this easily, run warm water over the outside of the molds for a few seconds.

              In a shallow dish, spread the shredded coconut. Roll each popsicle in the coconut to coat evenly, pressing gently to help it adhere.

                Serve immediately or return the coated popsicles to the freezer until ready to enjoy!
