Ingredients

1 small ripe honeydew melon

2 limes (juiced and zested)

2 tablespoons honey (or agave syrup for a vegan option)

1/2 teaspoon sea salt

Fresh mint leaves, for garnish

Skewers (wooden or reusable metal)

Instructions

Prepare the Honeydew: Cut the honeydew melon in half, scoop out the seeds, and peel the skin. Cut the flesh into 1-inch cubes.

Make the Lime Mixture: In a mixing bowl, combine the lime juice, lime zest, honey, and sea salt. Stir well until the honey is fully dissolved.

Assemble Skewers: Thread the honeydew cubes onto the skewers, leaving a little space between each piece to allow for even freezing.

Marinate: Place the assembled skewers in a shallow dish and drizzle the lime mixture over them. Allow the skewers to marinate in the fridge for at least 30 minutes, flipping them halfway through to ensure even flavor.

Freeze: Lay the skewers flat on a parchment-lined baking sheet and freeze for about 2-3 hours or until the honeydew is completely solid.

Serve: Once frozen, remove the skewers from the freezer and let them sit at room temperature for about 5 minutes to soften slightly. Garnish with fresh mint leaves before serving.

Enjoy: These refreshing skewers make for a perfect summer treat or a delightful addition to any gathering!
