Ingredients

2 ripe peaches, peeled and pitted

1 cup fresh or frozen raspberries

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Optional: 1/4 cup granola or crushed nuts for topping

Instructions

Prep the Peaches and Raspberries: If using fresh peaches, peel and pit them, then chop into smaller pieces. If using frozen raspberries, let them thaw slightly.

Make Peach Puree: In a blender, combine the chopped peaches, 1 cup of Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy.

Prepare Raspberry Layer: In a separate bowl, mash the raspberries lightly with a fork, leaving some texture. If you prefer a smoother texture, you can blend the raspberries gently for a few seconds.

Combine Layers: In an 8x8 inch (20x20 cm) baking dish or a silicone mold, pour half of the peach yogurt mixture evenly across the bottom. Drop spoonfuls of raspberries over the mixture, then swirl lightly with a knife or toothpick to create a marble effect.

Layer the Remaining Mixture: Pour the rest of the peach yogurt mixture on top of the raspberry layer, and then, if desired, sprinkle granola or crushed nuts on top for added crunch and flavor.

Freeze: Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4-6 hours or until completely solid.

Cut and Serve: Once frozen, remove the dish from the freezer. Let it sit at room temperature for a few minutes to soften slightly, then cut into bars or squares with a sharp knife.

Enjoy: Serve immediately or store the bars in an airtight container in the freezer for later enjoyment!
