Ingredients

2 cups fresh or frozen pineapple chunks

1/2 cup coconut milk (canned or carton)

2 tablespoons honey or agave syrup (adjust based on sweetness preference)

1 tablespoon fresh lime juice

Optional: pinch of sea salt

Optional toppings: shredded coconut, chopped nuts, or a drizzle of chocolate

Instructions

Blend the Base: In a blender, combine the pineapple chunks, coconut milk, honey (or agave), lime juice, and sea salt (if using). Blend until smooth and creamy, ensuring there are no pineapple chunks left.

Taste and Adjust: Taste the mixture and adjust the sweetness or lime juice according to your preference. Blend again if needed.

Pour into Molds: Carefully pour the blended mixture into popsicle molds, filling them about 3/4 full to allow for expansion as they freeze.

Insert Sticks: If your molds allow, insert the popsicle sticks into the center of each filled mold. Make sure they are sturdy enough to stand upright.

Freeze Time: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

Remove from Molds: To unpop the frozen pineapple pops, run the molds under warm water for a few seconds to loosen them, then gently pull the pops out.

Add Toppings (Optional): For an extra treat, roll the pops in shredded coconut, sprinkle with chopped nuts, or drizzle with melted chocolate before serving.

Serve and Enjoy: Place the pops on a serving platter and enjoy your tropical treat, perfect for hot summer days or any time you crave a refreshing snack!
