1 cup graham cracker crumbs

1 cup fresh lemon juice (about 4-6 lemons)

Zest of 2 lemons

4 large eggs

1/4 cup all-purpose flour

Pinch of salt

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Stir until the mixture resembles wet sand.

        - Press the mixture firmly into the bottom of an 8x8 inch baking dish evenly. Bake for about 10 minutes or until lightly golden. Remove from oven and allow it to cool while preparing the filling.

          Make the Raspberry Lemonade Filling:

            - In a food processor, combine the raspberries and 1/2 cup sugar. Pulse until smooth, then strain to remove seeds (optional, for a smoother texture).

              - In a large bowl, whisk together the raspberry puree, fresh lemon juice, lemon zest, eggs, flour, and a pinch of salt until fully combined and smooth.

                Combine and Bake:

                  - Pour the raspberry lemonade filling over the cooled crust, spreading it evenly.

                    - Bake in the oven for 25-30 minutes, or until the filling is set and a slight jiggle remains in the center.

                      - Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or until completely chilled and firm.
