1 cup fresh strawberries, hulled and sliced

1 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup graham cracker crumbs

1/4 cup unsalted butter, melted

Pinch of salt

1/2 cup white chocolate chips (optional, for drizzling)

1 tablespoon coconut oil (optional, for drizzling)

Instructions
 

Prepare the Graham Cracker Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix until the crumbs are well-coated with butter. Press about a teaspoon of the mixture firmly into the bottom of mini silicone molds or small muffin tins. Set aside.

    Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and continue mixing until fully incorporated. Stir in the vanilla extract until well combined.

      Combine Strawberry and Cheesecake Mixture: Fold the sliced strawberries into the cheesecake mixture gently, ensuring even distribution.

        Fill the Molds: Spoon the strawberry cheesecake filling over the graham cracker crust in each mold, filling them about 3/4 full. Smooth the top with a spatula.

          Freeze: Place the filled molds in the freezer and let them freeze for at least 4 hours or until completely solid.
