Ingredients

4 cups seedless watermelon, diced

1 tablespoon lime juice (freshly squeezed)

2 tablespoons honey or agave syrup (adjust based on sweetness of watermelon)

1 cup coconut water (or plain water, if preferred)

Optional: Fresh mint leaves for garnish

Optional: A pinch of sea salt for enhanced flavor

Instructions

Prep the Watermelon: Start by cutting the watermelon into small cubes. Remove any seeds if you're not using seedless watermelon.

Blend: In a blender, combine the diced watermelon, lime juice, honey (or agave), and coconut water. Blend until smooth. You can blend it to your desired consistency—smooth or with a few watermelon chunks for texture.

Taste Test: Give the mixture a quick taste. If it needs more sweetness, stir in a bit more honey or agave. If you're feeling adventurous, add a pinch of sea salt to bring out the flavors.

Pour into Molds: Pour the blended watermelon mixture into popsicle molds, leaving some space at the top as they will expand when frozen.

Insert Sticks: If your molds come with sticks, insert them halfway. If using paper cups, place a popsicle stick into the center of each cup.

Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until fully set.

Remove and Serve: Once frozen solid, run the molds under warm water for a few seconds to help release the popsicles. Carefully pull them out and place them on a plate. If desired, garnish with fresh mint leaves for an added touch.

Enjoy: Serve immediately and enjoy the refreshing taste of summer with every bite!
