2 cups plain Greek yogurt (or vanilla yogurt for extra sweetness)

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

2 cups Cinnamon Toast Crunch cereal

1/2 cup mini chocolate chips (optional)

1/2 cup chopped nuts (optional)

Cooking spray or parchment paper

Instructions
 

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper or lightly coat it with cooking spray. This will help the bars come out easily once they are frozen.

    Mix the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, honey, vanilla extract, ground cinnamon, and salt. Using a whisk, mix until completely smooth and well incorporated.

      Fold in Cereal: Gently fold in the Cinnamon Toast Crunch cereal, making sure it’s evenly coated with the yogurt mixture. If you’re adding chocolate chips or nuts, fold them in at this stage.

        Spread in Pan: Pour the yogurt-cereal mixture into the prepared baking dish. Use a spatula to spread it out evenly and press down to ensure the bars hold their shape.

          Freeze: Place the baking dish in the freezer and let it freeze for at least 4 hours, or until completely solid.

            Cut and Serve: Once frozen, take the dish out of the freezer. Lift the edges of the parchment paper to remove the block of yogurt from the pan. With a sharp knife, cut into bars or squares of your desired size.
