Ingredients

1 cup vanilla yogurt (Greek or regular)

1/2 cup granola

1/4 cup mini chocolate chips

1/2 teaspoon vanilla extract

1 tablespoon honey or maple syrup (optional, for sweetness)

1/2 cup crushed cookies (e.g., Oreos or chocolate chip cookies)

A pinch of sea salt

2 tablespoons of sliced almonds or chopped walnuts (optional)

Instructions

Prepare the Base: In a mixing bowl, combine the vanilla yogurt, vanilla extract, and honey or maple syrup (if using). Stir well until fully blended and smooth.

Mix in the Crunch: Gently fold in the granola, mini chocolate chips, crushed cookies, and a pinch of sea salt. If you’re using nuts, add those in as well. Ensure all ingredients are evenly distributed throughout the yogurt mixture.

Shape the Coins: Line a baking sheet with parchment paper. Using a tablespoon or cookie scoop, portion out the yogurt mixture onto the parchment, shaping them into round coins (about 2 inches wide and 1/2 inch thick).

Freeze: Place the baking sheet in the freezer and allow the yogurt coins to freeze for at least 2-3 hours or until solid.

Serve & Enjoy: Once the coins are frozen, you can transfer them to a zip-lock bag for storage. Serve straight from the freezer as a delicious snack or dessert that won’t melt quickly!
