Ingredients

For the Cookie Dough:

1 cup all-purpose flour

½ cup brown sugar, packed

¼ cup granulated sugar

½ cup unsalted butter, softened

2 tablespoons milk (dairy or non-dairy)

1 teaspoon vanilla extract

½ teaspoon salt

½ cup mini chocolate chips

For the Frozen Yogurt:

2 cups plain Greek yogurt (or any flavor you prefer)

¼ cup honey or maple syrup

½ teaspoon vanilla extract

For Assembly:

1 cup additional mini chocolate chips (for rolling)

Parchment paper

Instructions

Make the Cookie Dough:

    - In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      - Mix in the milk and vanilla extract until well combined.

        - Gradually add the flour and salt, mixing until just combined. Stir in the mini chocolate chips.

          - Once mixed, take spoonfuls of the dough, shape them into small balls (about 1 tablespoon each), and place them on a parchment-lined baking sheet. You should have about 12-15 balls.

            Chill the Cookie Dough:

              - Cover the baking sheet with plastic wrap and refrigerate the cookie dough balls for about 30 minutes to firm up.

                Prepare the Frozen Yogurt:

                  - In a bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix thoroughly until smooth.

                    Assemble the Sandwiches:

                      - Once the cookie dough balls have chilled, remove them from the fridge. Take a ball and flatten it slightly. On one side, place about 1 tablespoon of the frozen yogurt mixture, then top with another flattened cookie dough ball to create a sandwich. Press them together gently.

                        - Roll the edges of the sandwich in the additional mini chocolate chips to coat the sides. Repeat this process for all cookie dough balls.

                          Freeze the Sandwiches:

                            - Place the assembled cookie dough sandwiches on the parchment-lined baking sheet and return them to the freezer. Freeze for at least 2 hours or until firm.

                              Serve:

                                - Once frozen solid, remove the sandwiches from the baking sheet and wrap them in plastic wrap or store in an airtight container. Serve straight from the freezer and enjoy the delicious combination of cookie dough and frozen yogurt!
