Frozen Yogurt Cranberry Pecan Squares

2 cups plain Greek yogurt

1 cup fresh or frozen cranberries

1/2 cup chopped pecans

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1/4 cup shredded coconut (optional)

1/4 teaspoon salt

1/2 cup rolled oats (optional for a base)

Instructions
 

Prepare the Base (Optional): If you're using rolled oats, preheat your oven to 350°F (175°C). In a bowl, combine the rolled oats with a tablespoon of melted coconut oil (if desired) and a pinch of salt. Spread the mixture evenly in a greased 8x8 inch baking dish. Bake for 10-12 minutes until lightly golden. Allow to cool.

    Blend the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, almond extract, and salt. Whisk until smooth and creamy.

      Mix in the Fruits and Nuts: Gently fold in the cranberries and chopped pecans until evenly distributed. If you are using shredded coconut, mix it in at this stage.

        Layer the Mixture: Pour the yogurt mixture over the baked oat base or directly into the greased baking dish if you’re skipping the base. Spread it evenly with a spatula.

          Freeze: Cover the dish with plastic wrap and place it in the freezer. Freeze for at least 4-6 hours, or until set. Overnight is recommended for best results.

            Cut into Squares: Once frozen, remove the dish from the freezer. Let it sit at room temperature for about 5-10 minutes for easier slicing. Cut into squares of your preferred size.

              Serve: Enjoy the squares directly from the freezer. For a touch of elegance, you can drizzle with extra honey or a sprinkle of chopped pecans on top before serving.
