Ingredients

4 ripe bananas

1 cup plain Greek yogurt (or your favorite flavored yogurt)

1 cup dark chocolate chips (or semi-sweet)

1 tablespoon coconut oil

1/4 cup finely chopped nuts (e.g., almonds, walnuts, or peanuts)

1/4 cup shredded coconut (optional)

1 tablespoon honey or maple syrup (optional, for sweetness)

Instructions

Prepare the Bananas: Peel the bananas and cut them in half. Insert a wooden popsicle stick into each half, making sure it's secure.

Yogurt Coating: In a mixing bowl, add the Greek yogurt and honey (or maple syrup, if using). Stir until the mixture is well combined and smooth.

Dip the Bananas: Dip each banana half into the yogurt mixture, ensuring it's evenly coated. Allow any excess yogurt to drip off.

Place on a Baking Sheet: Line a baking sheet with parchment paper and place the yogurt-coated banana pops onto the sheet. Once all are dipped, place them in the freezer for at least 1 hour, or until the yogurt is firm.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring after each interval until completely melted and smooth.

Prepare for Dipping: If desired, mix together the chopped nuts and shredded coconut in a shallow bowl for extra texture and flavor.

Dip and Decorate: Remove the yogurt-coated banana pops from the freezer. Dip each pop into the melted chocolate, ensuring it's fully coated. Allow excess chocolate to drip off before rolling in the nut-coconut mixture, if using.

Freeze Again: Place the decorated banana pops back onto the parchment-lined baking sheet and freeze for an additional 1-2 hours until the chocolate is set.

Serve and Enjoy: Once fully frozen and set, remove the pops from the freezer and serve immediately. Enjoy the creamy yogurt and chocolate-covered bananas as a delightful treat!
