Frozen Yogurt Maple Oat Rings

1 ½ cups rolled oats

1 cup plain Greek yogurt

½ cup maple syrup (pure)

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon salt

1 tablespoon coconut oil, melted

½ cup chopped nuts (e.g., walnuts or pecans)

½ cup mini chocolate chips (optional)

Cooking spray or parchment paper for baking sheet

Instructions
 

Prepare the Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly spray it with cooking spray to prevent sticking.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, and salt. Stir well to ensure the dry ingredients are evenly mixed.

      Mix Wet Ingredients: In another bowl, whisk together Greek yogurt, maple syrup, vanilla extract, and melted coconut oil until smooth and creamy.

        Combine Mixtures: Pour the yogurt mixture into the bowl with the dry ingredients. Stir until all the oats are well coated. If you are adding nuts or chocolate chips, fold them in at this stage.

          Shape the Rings: Using your hands, take a handful of the mixture and shape it into rings (about 2-3 inches in diameter) on the prepared baking sheet. Make sure to keep the holes in the center large enough, as the mixture will puff up slightly while baking.
