2 medium-sized apples (preferably Granny Smith for tartness)

2 cups Greek yogurt (plain or vanilla)

1/2 cup pistachios, shelled and roughly chopped

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

1/4 cup dark chocolate chips (optional, for drizzling)

Prepare the Apples: Core the apples and cut them into thick slices (about 1-inch thick) to form apple rings. You can leave the skin on for added fiber and a pop of color.

    Make the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and ground cinnamon (if using). Whisk until smooth and creamy.

      Assemble the Pops: Dip each apple slice into the yogurt mixture, ensuring they are well coated. Allow any excess yogurt to drip off.
